Celery & Apple Salad with Ground Cherry Vinaigrette
Fall is here with all its bounty. In collaboration with the Dane County Farmers
Market, I created this beautiful Celery & Apple Salad with Ground Cherry
Vinaigrette made with local seasonal ingredients and I demonstrated how to
make it at the Wednesday market. It is a very easy recipe and the perfect fall
salad to accompany your favorite protein. Ground cherries are abundant at the
market right now. They are sweet and delicious. I used them both in the salad
and the vinaigrette.
The Dane County Farmers Market has become the largest producers-only
farmers market in the U.S. If you could stroll around downtown Madison on a
Saturday morning, you wouldn’t miss it. Right on the Capitol Square with over
250 local vendors, it is a site to visit and taste locally grown produce!
6 Celery stalks and some leaves
3 Green onions
1 Small jalapeño
1 Large crisp apple
1 Cup ground cherries, husked
A handful of herbs (parsley, basil, mint)
1/2 Cup ground cherries husked
1 Clove garlic
1 Tablespoon apple cider vinegar
1 Tablespoon honey
1 Tablespoon whole grain mustard
1/4 Cup extra virgin olive oil
Salt & pepper to taste
Make the Vinaigrette
Add ground cherries and garlic in a food processor or blender, mix to form a
smooth paste. Transfer to a small bowl. Add vinegar, honey, and mustard.
Whisk and add olive oil in a slow stream until emulsify. Taste and season with
salt and pepper
Make the Salad
Cut celery, green onion, and apple into thin slices. Mix in a large bowl. Cut
jalapeño in half, remove seeds, and dice. Add to bowl along with ground
cherries. With your hands, tear herbs into the salad.
Add vinaigrette and toss gently. Serve immediately.
Cook's Note: Add small ground cherries whole to the salad or cut large
cherries in half. Enjoy!
